Luscious Lemon Cupcake



This is my favorite new cupcake. I was quickly shopping for cupcakes for my son’s school Easter party and found these delightful looking cupcakes at my local Wal-Mart bakery. I was not disappointed. This is a lemon cake with lemon buttercream frosting and lemon drop candies sprinkled on top for a garnish! Yummy! Light as air, sweet, tart, melt-in-your mouth delicious.  As I’ve already confessed these little minis were store-bought but it would be so easy to replicate and probably even more tasty. Imagine a lemon box mix with a little fresh lemon zest added. Homemade buttercream frosting with lemon flavoring and a little zing of lemon zest and of course the lemon drop candy sprinkles. Oooh, what if you added a lemon curd filling inside? Fabulous! I am so going to make these myself. After we eat all the store-bought ones of course.

Spring Clean


I'm not sure why I chose this week to spring clean the house. I printed off my checklist and have been going room by room all week. I'm not talking about just cleaning surfaces that you can see. This is the kind of house cleaning that makes you wake up the next morning so sore you find muscles you've never used before. The kind of cleaning that has you moving furniture and appliances and digging through couch cushions like a crazy person with a vacuum. Finally, as you check the last thing off and it's all finally done you take a deep breath of lemon clean air and watch in horror as your child spills milk all over the kitchen floor.


It reminds me of what Jesus said about our dirt people lives. There is never enough self cleaning we can do to make ourselves acceptable to God. Never enough good works, prayers of confession, sacrifices made. "For the wages of sin is death, but the gift of God is eternal life in Christ Jesus our Lord. (Romans 6:23)" God requires us to be a living sacrifice by admitting that we are sinners, confessing our sin to Him, and believing Christ died to forgive our sins and rose again in three days just as He said he would, forever conquering death, hell and the grave.  Glorious Savior!  He is mighty! Our son, William believed this week that he needed Jesus in his heart and invited him to create a clean heart in him. Oh the joy of salvation! "I have no greater JOY than to hear that my children walk in truth." 3 John 4  You can be sure we will be celebrating new life this coming Resurrection Sunday!

Joyful Things

"When the dog bites, when the bee stings, when I'm feeling sad, I simply remember my favorite things, then I don't feel so bad!" Sometimes fun little projects or cute things that inspire us are part of the joy of life. They can teach us things about who we are, what we like, or about gratitude, or perseverance. The fact that we were created in the image of God (the ultimate creator) tells us that we were made to be creative. God wants us to use our  creativity to inspire others to believe. If we use this gift of creativity properly it can be for the glory of God and the good of others. But always remember, the best things in life aren't things! That being said, here are a few of the things that are inspiring me lately. What about you? How have you used your creativity lately?

Strawberry Fest

What a weekend. Saturday we went to the Ponchatoula strawberry Festival for the first time. It was something else. Uniquely Louisiana. We walked around, enjoyed the strawberry beignets, deep fried strawberries, grilled corn and other festival delicacies and admired the art of local artists. The kids enjoyed catching beads and candy at the parade and then it was too hot to stand it (almost 90 degrees in April!) so we left. We've eaten  a lot of strawberries this weekend and William's class is going on a field trip this week to pick more strawberries!

Project Complete!

About a month ago, the Brady Family, offered us a swing set from their back yard that their own kids had outgrown. Now understand that when their children got this set it was a hand-me-down from someone else, they loved and played on it for ten years or so and now it is handed down to our children who will hopefully love it and play on it for another few years. I went to see it at their house first with the kids and without my husband. I could see it had potential even though it was partially disassembled and laying in pieces on the ground, so I accepted it gladly. A few weeks later when my husband and a buddy went to pick it up he couldn’t believe I had said yes! They couldn’t even figure it out how to get it out of their back yard without taking it completely apart or taking down a fence. Nevertheless, a week later and a with the help of a few more good men they got it apart and to our yard. It is so heavy! My “handy” husband bought some new wood and repaired and showed some much needed love to this well used swing set and made it nice and safe. He added a climbing wall and a pulley with rope to raise their bucket of “treasures” to the top of the fort. The kids were already loving it. Then he borrowed a power washer and cleaned the whole thing and finally today, we all gave it a fresh coat of paint. It’s far from new but our kids think it’s the best playhouse in the whole world! Thank you Brady family and thank you Stanley (and friends) for bringing it back to life.
